I have been hungry for fried green tomatoes for awhile and I have been struggling to find some green tomatoes. At this week's farmer's market, I struck gold, or, well, green!
My mom and I made some for dinner and they were delicious and it really wasn't as difficult as I thought they would be.
I used 3 green tomatoes, 2 cup of flour, and about 1/2 cup soymilk. I heated about 1/2 cup of veg. oil in a pan to get it super hot. While the oil was heating, we sliced the tomatoes about 1/4 inch thick, dipped them in the milk, dredged in the flour mixture, shook them and threw them in the oil. Wait until they are golden on each side and then place them on a paper lined plate.
Yum! Eat and enjoy.
