My New Favorite Treat -- Roasted Chickpeas!

If you like corn nuts, or nuts, you'll love roasted chickpeas. This is a super easy and awesome recipe.

1 can 15 oz chickpeas or 1 cup dried chickpeas (soaked overnight and rinsed)
2 tbsp olive oil
1 tbsp lemon juice
1 tbsp ground ginger
A generous dash of cayenne pepper

Preheat oven to 375 degrees. Line cookie sheet with parchment paper. Mix chickpeas with oil, ginger, juice and pepper. Mix well. Spread on sheet. Bake for 45 minutes mixing 2 or 3 times.

Eat them hot, warm, cool, room temperature. The baking sheet will be empty before you know it!!

Nom, nom, nom, nom, nom! Delicious!
